The Rejuvenation Process
Minterbrook's signature process was inspired by a discovery on the French Riviera, where our family met the local oyster farmer responsible for supplying the royal family. His technique — returning oysters to the water after harvest to heal, strengthen, and regenerate before shipping — produced a miraculous increase in freshness, vigor, and longevity. We brought that technique home to Minter Bay, refined it, and built our entire operation around it. The result: an industry-leading shelf life measured in weeks, not days.

Seed to Harvest
Grown by Nature, Overseen by Hand
Minterbrook oversees the entire process from seeding to harvest. We produce our own algae, naturally suspended in the water column, providing the most seamless feeding transition for oysters as they move from the nursery out onto the bay. Our oysters are free-range and naturally grown on the tideflats — not crowded into tanks or artificial environments.

Hours From the Water
Our sorting, packaging, and shipping facility sits directly on the shore of the bay. Shellfish are pulled from their natural habitat hours before they ship — that proximity is what makes the difference in taste, texture, and longevity. Every oyster is hand harvested, hand sorted, and hand packaged.
